Product description

Swaledale's grass-fed cattle produce excellent beef* fat that is naturally high in omega-3 thanks to the diverse range of grasses on which our heritage cattle feed. Dry-aged in our Himalayan salt chamber, Swaledale beef fat has a distinctive flavour making it a great addition to the home cooks larder.

"Use a very sharp knife to thinly slice the fat and then lay over leaner roasting joints like a topside or top rump, providing additional fat to baste the joint whilst roasting, maintaining succulence and adding flavour.

Alternatively chop up the fat and set over a low heat with a splash of water to slowly render and produce dripping (or tallow, depending on where you’re from). Pass through a sieve and into a sterile container and it will keep in the fridge for weeks. A perfect fat for roasting vegetables; be it your roasties, or maybe carrots with thyme and garlic, or celeriac. For a slight twist, salt the fat and then cold smoke. If you manage this, then a smoked beef fat hollandaise sounds fairly awesome!"
