Porchetta, or porquette in France, is a wonderfully flavoursome roasting joint that in many parts of the world has a distinct celebratory feel. In Italy, porchetta has its roots in culinary traditions and is often sold by pitchmen out of their iconic white vans, they do a roaring trade during public events or holidays. In the central Italian region of Lazio however, porchetta is a common street food and often used as a pizza topping for pizza bianco.

To make porchetta, pork* loin is prepared boneless with just enough belly to roll around the eye of the loin. The belly provides protection to the leaner loin cut that is wrapped within it, and contains ample fat to melt and baste the joint internally as it roasts. 

Porchetta is known for its wonderfully tender meat, surrounded by crisp skin; however our additional dry-aged pork produces porchetta with particularly outstanding crackling. 

Traditionally herbs, garlic and other spices are added to the pork before it is rolled, resulting in a finished product that is peppered with flavour and interest. We give a nod to the Italian origins of the dish with a delicious stuffing of minced pork laced with fennel seeds, garlic and red wine - porchetta makes a wonderful centrepiece for Sunday lunch or festive table.
