Product description

Well marbled and supremely delicious, this sirloin steak* for two to share is undeniably tender and giving in its results. The taste** is testament to the importance of the excellent husbandry such animals deserve, and that Swaledale Butchers is so famous for.

Chef Val Warner inspires:
"Grilled over charcoal is infinitely my favourite method of cooking sirloin. A variety of sauces will work, from a fresh salsa verde or simple garlic and parsley butter to perhaps a sauce of autumn ceps or brandy and peppercorns. So good is this cut that I like it very simply dressed with either just salt, or with salt, olive oil and lemon juice, and served alongside a tomato salad with a good mustardy vinaigrette.

For an alternative, blitz up some red miso paste with a large handful of fresh sage, some neutral oil and a little water. Smear this creamy mix all over the beef and leave it overnight to marinade. Grill slice and eat with shiitake mushrooms dressed in a little Japanese soya sauce, rice vinegar and sangho pepper.

I'd propose the meat be removed from the heat when the internal temperature reads 52 °C on The Wand of Hope. Allow the sirloin to rest well, and make sure any delicious juices are utilised and added to an appropriate sauce."

Ingredients

Grass-fed, heritage breed beef slow grown to maturity on the lush, green pastures of the Yorkshire Dales. Dry-aged on the bone for >28 days.

Cooking advice

  1. Take steak out of the fridge, remove packaging, pat dry with kitchen paper, pop on a plate and allow to reach room temperature
  2. Preheat your oven to 180°C
  3. Season the steak generously with sea salt
  4. Set a non-stick pan or cast iron skillet over a medium to low heat then add a tablespoon of oil*
  5. Carefully stand the sirloin up in the pan, fat side facing down - you will need to hold it in position, so it doesn’t fall over. Cook like this for 3-minutes or so rendering the fat a little
  6. Turn the heat up and lay the sirloin on its side. Allow to cook on this side for 2-minutes, moving it around the pan as you go
  7. Flip the steak and repeat on the other side
  8. Add a large knob of butter to the pan then turn the heat down and as the butter begins to foam and turn brown, use a spoon to baste the steak
  9. Cook the steak in the foaming butter for 1-minute, flipping it regularly and basting almost continuously
  10. Transfer the pan (or the steak to an ovenproof dish or tray if your pan handle isn’t oven proof) to the oven and set a timer for 2-minutes for a medium-rare steak
  11. Remove the steak from the oven and transfer onto a plate
  12. Pour all the hot butter from the pan over the steak
  13. Leave to rest somewhere warm for at least 10-minutes

*Select an oil with a high smoking point and neutral flavour
